Tuna Burgers

IMG_1715

This is a quick meal you can make using canned tuna.  It’s delicious and full of nutrients.  Great for the whole family.  They are gluten free and low in calories (if you count) because I used my Shaped by Sherri juice pulp bredcrumbs to bulk them up.  The burgers were nice and moist from the beet pulp. Here’s how to do it:

Ingredients:
1 5oz. Can of tuna fish packed in water
1/2 cup juice pulp breadcrumbs
Salt and pepper to taste
Garlic powder to taste
Parsley flakes to taste
Juice from 1/2 a lemon
1 egg beaten
Ghee

Directions:
Mix the tuna together with all the ingredients except the egg and taste to see if you need more spices. Then mix in the egg and form into 4 small tuna patties. Heat the ghee in a pan. Add the burgers to the pan and cook on both sides for about 4 minutes each side. Sprinkle top of burgers with more seasonings while they cook.

They are perfect just like this and could be eaten alone, over a salad, or on a bun. But if you want to go one step further it only took a few minutes to prepare kale wraps for the sliders while they cook.
Simply boil water with a pinch of salt. Add a few full leaves of fresh red kale to the hot water for a moment or two until it’s bright green. Then pull out of water and quickly place in icy cold water to stop the cooking. Pat the excess water off the leaves with a dish towel and wrap them around the burgers. This also pairs well with rutabega friesGive it a try!
