- 3-4 small white potatoes, diced into ½ inch cubes and soaked in cold water for 10 minutes.
- ½ red bell pepper, diced into ½ inch cubes
- ½ a white onion, diced into ½ inch cubes
- 2 cloves garlic, minced
- Pinch of salt, plus more to taste
- Pinch of Pepper
- ¼ tsp Oregano
- ¼ tsp Basil
- ¼ tsp Garlic powder
- 1-2 tbsp Olive oil
- Preheat oven to 425* F.
- Drain the water from the potatoes and pat dry. You want very little moisture left on the potatoes.
- Toss potatoes, red pepper, onion and garlic in olive oil to coat. Add the salt, pepper, oregano, basil, garlic powder and toss to coat.
- Spread out mixture evenly onto a baking sheet. It should be one layer, no overlapping pieces.
- Place in oven to bake for about 15 minutes. Stir and put back in oven for another 10-15 minutes. Taste and adjust seasonings to your liking.
- Serve how you like. I would love this with a runny egg over top and a big green salad. Enjoy!
