Espresso Ice Cream

Ingredients
  • 1 cup full fat coconut milk
  • ¾ cup almond milk
  • ½ cup, plus 2 tablespoons cold espresso
  • pinch salt
  • ¼ cup maple syrup
  • 1 tbsp Kahlua (optional...to intensify coffee flavor and keep ice cream from becoming "icy". Omit if serving to minors)
  • 1 tbsp cocoa powder (optional for a touch of mocha flavor)
Directions
  1. Blend together all the ingredients in a blender.
  2. Churn in an ice cream maker for 20 minutes and serve immediately.
