Place the coconut milk in the fridge overnight. The next day, start by zesting your limes into a blender before you cut them open. Then add the juice from the limes, the coconut milk (or you can use just the "cream" that will float to the top), avocado, vanilla, maple syrup and salt into a blender and blend until smooth. Pour into 2 glasses and enjoy with a straw! Or you can put them into highball glasses and serve them with a granola topping and a spoon for more of a dessert feel.
