Pear French Toast

Ingredients
  • 1 ripe Bosc pear, slice in half, cored, then sliced into ¼" slices
  • salt
  • 1 egg, beaten
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • Coconut Oil
Directions
  1. Sprinkle the pears with salt and set aside.
  2. Beat egg together with cinnamon, vanilla, and a pinch of salt.
  3. Heat about a tablespoon of coconut oil in a pan.
  4. Dip the pear slices into the egg batter, then brown on both sides in the pan.
  5. Enjoy with traditional maple syrup, or top with ricotta/goat cheese, a drizzle of honey and some toasted nuts.
