Pear French Toast
- 1 ripe Bosc pear, slice in half, cored, then sliced into ¼" slices
- salt
- 1 egg, beaten
- ½ teaspoon cinnamon
- ½ teaspoon vanilla extract
- Coconut Oil
- Sprinkle the pears with salt and set aside.
- Beat egg together with cinnamon, vanilla, and a pinch of salt.
- Heat about a tablespoon of coconut oil in a pan.
- Dip the pear slices into the egg batter, then brown on both sides in the pan.
- Enjoy with traditional maple syrup, or top with ricotta/goat cheese, a drizzle of honey and some toasted nuts.
