Paleo Waffles

- Dry Ingredients:
- 1 cup almond flour
- ¼ cup cassave flour
- ¼ cup arrowroot flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- Wet Ingredients:
- 3 eggs
- 1 tablespoon maple syrup
- ½ cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1 ripe banana, mashed
- Coconut oil /ghee
- Preheat your waffle iron to medium heat.
- Whisk together the almond flour, cassava flour, arrowroot flour, baking soda and salt.
- In a separate bowl whisk together the eggs, maple syrup, milk and vanilla. Stir in the mashed banana.
- Add the wet ingredients into the dry ingredients and stir until combined.
- Grease the waffle iron with coconut oil or ghee.
- Pour just enough batter to coat the bottom of the iron. Close the iron, flip it and lock it.
- Wait about 1 minute, or until you smell waffles. Then flip, open and remove the waffles with a spatula.
- Enjoy!
- I liked mine with blueberries sprinkled on top and a drizzle of maple syrup.
