Asparagus Soup

- 1 bunch asparagus, ends trimmed and cut into 1 inch pieces
- 1 small white onion, cut into slices
- Coconut oil
- 3 cups organic vegetable broth
- ½ a large rutabaga (about 11/2 cups), diced
- Salt and pepper
- ½ a ripe avocado (optional)
- Preheat oven to 350 degrees.
- Toss asparagus and onion in light coating of oil and top with salt and pepper.
- Bake in oven for 15 minutes.
- Remove and stir around and place in oven for another 15 minutes.
- Meanwhile, put vegetable broth in a pot and bring to a boil.
- Add the rutabaga to the broth and let cook for about 20 minutes. Until soft and tender.
- When the rutabaga and the asparagus are cooked, add everything to the food processor to smooth into creamy soup.
- At this point you can add the avocado and purée that too. Again, the avocado is optional.
