Vegan Pumpkin Chocolate Chip Cookies

Ingredients
  • 2 cups almond meal/flour (
  • I like Honeyville Brand)
  • ½ teaspoon sea salt
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon cloves
  • ¼ teaspoon nutmeg
  • ¼ cup pumpkin puree ( not pumpkin pie mix)
  • 3 tablespoons maple syrup
  • 2 teaspoons vanilla extract
  • ½ cup dark chocolate chips ( I like Enjoy life brand as they are soy free and dairy free)
Directions
  1. Preheat oven to 350*.
  2. Line a baking sheet with parchment paper.
  3. Mix together all of the dry ingredients (flour, salt, baking soda, and spices).
  4. Add the wet ingredients (pumpkin, maple syrup, and vanilla).
  5. Stir in the chocolate chips.
  6. Roll batter into tablespoon sized balls and flatten on parchment lined baking sheet.
  7. Bake for about 19 minutes, or until the bottoms start to brown.
  8. Eat!
