Cauliflower Mash
Recipe type: Side Dish
  • 1 head of cauliflower, cut into florets
  • 3 tablespoons chicken or vegetable broth
  • 2 tablespoons ghee or bacon grease, or 1 of each (For vegan version, omit this ingredient)
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • Add ons:
  • You can always add other flavorings like rosemary or garlic. Feel free to get creative.
  1. Steam the cauliflower. Place a small amount of water in the bottom of a pot. Place a steamer basket filled with cauliflower on top of the water and place a lid overtop. Let simmer for about 20 minutes, or until fork tender.
  2. Put the now cooked cauliflower into a food processor with the rest of the ingredients. Process until you have your desired texture. My husband prefers "whipped", so we make them smooth and creamy, but you can also mash them by hand with a potato masher or pulse the food processor just a few times to get more texture in your mash. The longer it processes the smoother it gets.
