Made shepherd's pie over the weekend with turkey and cauliflower mash. Saved half of the celery, carrot and onion sauté and added it to my thawed chicken broth. I also had some already cooked chicken in the freezer. I thawed that too and added it all to the chicken broth. Then I had chicken soup any time I wanted it for the week. #ShapedBySherri #eliminationdiet Testing #nightshade vegetables today. Wish me luck and cross your fingers  that I can still eat tomatoes without ill effects. Here are some roasted "breakfast style" potatoes. 
Ingredients: 
3-4 small white potatoes from the farmer's market, diced
1/2 red bell pepper, diced 
1/2 a white onion, diced
2 cloves garlic, minced
Salt
Pepper
Oregano
Basil 
Garlic powder
Olive oil
Directions:
preheat oven to 425*
Toss potatoes, red pepper, onion and garlic in olive oil to coat. Spread evenly on baking sheet and top with spices to taste.  A good dusting of each should do it. 
Place in oven to roast for about 15 minutes. Stir and put back in oven for another 10-15 minutes. Serve how you like. I would love this with a runny egg over top and a big green salad. Enjoy!

Ingredients:
1 ripe plantain, sliced in half, then halve each half
Coconut oil
Cinnamon
Pinch of salt
Directions:
Heat a thin layer of coconut oil in sauté pan until rippling. 
Add the plantain slices ( they should sizzle when they hit the pan) 
Top the slices with a light coating of cinnamon and a pinch of salt. 
let slices brown on the bottom (1-2 minutes)
flip and brown the other side. Again, sprinkle the top with cinnamon.

Made this #blueberrypie gelatin a few weeks ago. It tastes just like blueberry pie filling ( the best part). I don't know about you, but I always eat my slice of pie, then go back into the pan with my spoon to scrape up the filling. I keep eating the filling, leaving the crust behind until I realize I've eaten another whole slice ( or two) and force myself to stop. In this case, you don't have to stop as this is a much healthier alternative to traditional blueberry pie with crust. I used agar agar (a seaweed) to gel it. Don't worry, it doesn't have a gel consistency ( or taste like seaweed) and you won't miss the crust! Ingredients:
10oz. Bag of frozen blueberries
2 teaspoons kuzu (or arrowroot powder)
2 teaspoons water
1/2 teaspoon agar powder
3 tablespoons water
6 tablespoons maple syrup
1/2 teaspoon vanilla extract
Pinch of salt
Lemon zest to taste (optional)
Directions:
Place the frozen blueberries in a pot and bring up to a simmer. 
Mix kuzu and 2 teaspoons water in a small bowl and set aside
In a separate pot, bring the remaining 3 tablespoons of water and agar powder to a boil, stirring constantly. 
Simmer for about 5 minutes or until the agar has dissolved. 
Add the maple syrup to the agar mixture and bring to a boil again. 
While it's boiling, add the kuzu mixture to the agar mixture and stir until combined. 
Add the agar and kuzu mixture to the blueberries. Also add the vanilla and salt. Stir to combine. 
Pour into a pie plate to cool. Top with lemon zest if desired. 
Chill in fridge. 
Top as desired.
