Chocolate Mint Matcha Bars

This is a nice lightly sweet treat for you matcha lovers!  The  matcha is what makes it green, which is why it lends itself to peppermint.  These would be a great treat for St. Patrick’s day!

Ingredients:

3 Tablespoons full fat coconut milk

2 teaspoons matcha powder

1/8 cup, plus 1 Tablespoon maple syrup

1 cup coconut butter ( I bought, but you can make your own)

1 teaspoon vanilla extract

1/2 teaspoon peppermint extract

Directions:

Mix coconut milk with matcha powder until smooth.  Pour the mix into a Vitamix and follow with all the other ingredients.  Start with the liquid and put the coconut butter in last.  Mix until a thick paste forms.  Pour the paste into a loaf pan lined with parchment paper and spread into a block like you would fudge.  I made them about an inch thick so they would stay together when cut into bars.

Optional Chocolate Topping:

Melt 6 squares of a Green & Blacks 85% dark chocolate bar with 1 TBSPN of coconut oil in a butter warmer pan. (Be sure to break up the chocolate before you try to melt it.) When the chocolate starts to melt, take the pan off the heat and stir until all the chocolate is melted.

Pour the melted chocolate on top of the coconut mixture in the pan.

Let sit in fridge for 30 minutes to chill and solidify.

Cut into bars and eat!
