Dairy Free Pesto

I love how simple this pesto is and that it is completely dairy free. Additionally, the raw garlic is so good for you as it has yeast fighting properties. This is a very versatile dip. You can use it as a spread for bread, a veggie dip, or even as a topping for beef, chicken, fish, veggies, or pasta. I even use it as a salad dressing sometimes. And my new favorite way to eat it is atop roasted sweet potatoes. What will you you use it for?
Ingredients:
1 1/2 cups fresh basil leaves
3 cloves garlic
1/3 cup extra virgin olive oil
1/3 cup pine nuts or hemp seeds (soaked in water overnight, drained and rinsed)
1/2 teaspoon sea salt
fresh lemon juice from half a lemon
1/2 teaspoon umeboshi vinegar (optional for a cheesy flavor)
Directions:
Blend everything together in a food processor until bright green a fully combined. Serve how you like.
