European Style Hot Cocoa

 CHOCOLATE!

 That glorious concoction that makes my heart sing!

 I’m simply in love with it and enjoy it almost daily.  Although, I’ve been trying to avoid it and all sugar recently, to heal my body….sigh.

 However, there are just certain times of the month, when I just HAVE to HAVE IT!

 One such occasion just hit and I was in the house with very little chocolate to help me with my fix.  Half a cup of chocolate chips to be exact.  And I just didn’t feel like having a handful of chocolate chips.  I was interested in something more festive.

 It was a chilly winter night, so I was also looking for some comfort.  Hmmm…a hot chocolate might be in order.

 I had just seen a program on the Food Network about European drinking chocolate.  This is a very thick “hot cocoa” made with heavy cream.

 I kept pondering and came up with the decadent treat below.

 I’m telling you, the first sip is strong, but the second is delightful and it gets better as you sip.   It’s the PERFECT chocolate fix and so indulgent that….(I can’t believe I’m gonna say this)….but I did NOT finish the whole mug.  This is unheard of for me.  (Just ask my husband).

 I’m known for finishing my plate.

I left some behind ONLY because my stomach was full and I had had my fill, not for any lack of delight.  This is an unusual experience for me, but one I am glad for, as I felt SATISFIED with less sugar intake.  

Amen!

 Since this first encounter, I have had many more dates with this indulgent drink!

 It’s so simple and bound to be a great crowd pleaser.  It’s a real posh looking dessert.

Ingredients:

1    8.5 oz. container of coconut milk

1/2 cup Dark Chocolate Chips (I used Enjoy Life, gluten, soy, dairy, nut free)

 Directions:

 Heat the milk in a pot.  Once it starts to warm, turn the heat to a simmer and stir in the chocolate chips.  Continue to stir until the chips are completely melted and combined with the milk.

 Optional: Add a splash of vanilla or peppermint oil to make it festive.

 *You can also let this cool in the fridge and drink cold later.  It will not separate and it’s just as delicious cold!

Ingredients

  5. *You can also drink it cold after it's combined. "Frozen Hot Chocolate".
