These little nuggets will impress at your next gathering for breakfast or brunch.  They look really fancy, but are pretty easy to make.  If you cannot eat nightshade vegetables (like white potatoes, peppers, tomatoes, eggplant) feel free to try this recipe with rutabaga, parsnips, or turnips, omitting the pepper.

Ingredients: 

3-4 small white potatoes, diced into 1/2 inch cubes and soaked in cold water for 10 minutes.

1/2 red bell pepper, diced into 1/2 inch cubes

1/2 a white onion, diced into 1/2 inch cubes

2 cloves garlic, minced

Pinch of salt, plus more to taste

Pinch of Pepper

1/4 tsp Oregano

1/4 tsp Basil

1/4 tsp Garlic powder

1-2 tbsp Olive oil

Directions:
Preheat oven to 425* F.  

Drain the water from the potatoes and pat dry.  You want very little moisture left on the potatoes.  

Toss potatoes, red pepper, onion and garlic in olive oil to coat.  Add the salt, pepper, oregano, basil, garlic powder and toss to coat.

Spread out mixture evenly onto a baking sheet.  It should be one layer, no overlapping pieces.

Place in oven to bake for about 15 minutes. Stir and put back in oven for another 10-15 minutes.  Taste and adjust seasonings to your liking.

Serve how you like. I would love this with a runny egg over top and a big green salad. Enjoy!
