Homemade Chocolates

It’s no secret that I love chocolate, but this particular chocolate recipe make my heart sing.  There is something about eating chocolate in the shape of Mickey Mouse that makes the whole experience more enjoyable.

I also love that I know all of the ingredients in these chocolate and it feels like real candy.  As long as I can find a mold for it, I can eat these candies in any shape I want.  That is very cool and I think makes this snack both kid and adult friendly.

When I made them, I just used a Mickey Mouse ice cube tray we had.  It worked perfectly as a chocolate mold, so feel free to think outside the box when looking for chocolate molds and look at ice cube trays too.

Ingredients:

2 oz. baking chocolate

2 tsp. honey

1 TBSPN coconut oil

splash organic pure vanilla extract

pinch salt

Directions:

Make a double boiler by filling a pot with water and heating.  Then place a glass bowl above the pot, but don’t let it touch the water.  Melt the chocolate together with all the other ingredients in the glass bowl.  Continue to stir it until it’s fully melted and combined.  Pour the mixture into the chocolate mold.  It made about 6 Mickeys.  Freeze for 30 mins.  Eat. They will be a little messy and melty, but a perfect summer treat to cool you down and the small batch will keep you from over indulging.  However, you can easily double this recipe to make more.
