Lemon Dijon Vinaigrette
This recipe for salad dressing couldn’t be easier to make. Not only that, but it looks and tastes like it’s more elegant than it is. It would be a great quick recipe to whip up when you have company over, but it’s simple enough to make on Monday and take with you for lunch on Tuesday and Wednesday. I’d prefer to know all the ingredients in my dressing, so this trumps packing pre-bottled, store-bought dressing any day.
Ingredienets:
1/4 cup of lemon juice (about 2 lemons)
1/3 cup olive oil
1 teaspoon organic dijon mustard (try to find a brand without any sugar and minimal vinegar)
1/4 teaspoon umeboshi vinegar
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
Salt to taste
Directions:
Simply put all the ingredients into a blender and blend until unified. Taste and add salt if necessary.
