Lime Vinaigrette

This recipe is so simple that you don’t need more than a jar to prepare it.  It’s a great one to use when you’re looking for a pair with Mexican flavors in a salad like jicama, roasted corn, red peppers, black beans, etc.  Give it a try!

Ingredients:

1/2 cup lime juice (about 8 limes)

1 teaspoon maple syrup

1/2 teaspoon ground cumin

1/2 teaspoon ground coriander

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

2/3 cup olive oil

Directions:

Place all the ingredients except for the oil in a jar and shake together to combine.

Add the olive oil to the container and shake together again so everything combines.

Pour over your favorite salad.
