Mama’s Marinara

If you haven’t noticed by now, my mom is a huge influence on the way I cook.  And my most delicious treats come straight from her.  Case in point…Here is her tomato sauce recipe, with a shaped up sugar tweak from me. This is the marinara recipe passed down directly from my Italian grandmother.  I know I don’t look Italian, but let me assure you my grandmother was 100% and came through Ellis Island when she was young.  This is a really quick recipe to whip up on a weeknight and can be used for more than just pasta.  Think spaghetti squash, peas, eggs, chicken, eggplant..or really most vegetables and protein sources.  It can spice up most meals from boring to scoring! It will quickly become a staple in your house.  It sure is in mine.

Ingredients:

4 cloves garlic, peeled and minced

1 tablespoon olive oil

1 jar crushed tomatoes (18 0z)

1 jar tomato paste (7 oz)

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon coconut sugar (optional)

3-4 Freshly torn basil leaves (optional)

Directions:

Brown the garlic in a saucepan.  As it starts to brown, add all the other ingredients (except for the sugar) and bring to a simmer. Allow to continue to simmer for 10-20 minutes depending on how much time you have.  Taste and add sugar if desired.  At this point, you can also stir in the fresh basil leaves if you have them.  Serve how you like or store for later.
