Mint Chocolate Chip Ice Cream

This is an easy and dairy free way to cool down this summer.  Most likely, you will be able to make this from your pantry without going to the store and in less time than it would take to walk or drive to the store to pick up a pint.  As such, you can make it in your PJs, bathing suit, etc and it will taste more satisfying because you made it yourself and you know all the ingredients.  Here’s how to do it…

Ingredients:
1 cup full fat coconut milk
3/4 cup almond milk
1 tsp vanilla extract
1/4 cup plus 2 tbsp. maple syrup
1/4 tsp peppermint extract
pinch salt
1/2 cup “Enjoy Life” chocolate chips

Directions:
Blend all the ingredients (except the chocolate chips) together in a blender.

Pour the blended mixture along with the chocolate chips into an ice cream maker and churn for about 20 minutes.  

Enjoy immediately. The texture will be perfectly smooth and creamy right from the ice cream maker. It’s at its best when eaten right away.  Share with friends, family, neighbors, etc.

You can freeze leftovers but it’s BEST freshly churned.

*If you don’t have an ice cream maker, simply freeze the mixture for 4-6 hours and thaw for about 20 minutes before serving.
