Roasted Potatoes

These potatoes are a showstopper side dish. They look super fancy and impress most everyone, but they are really easy to make. I like to use the multicolored potatoes for their beauty, but also for their variety of nutrients. Give it a try!
Ingredients:
1 lb. bag of multicolored baby potatoes
2 cloves garlic, minced
Avocado oil
Salt
Garlic powder
Herbs de Provence
Directions:
Preheat the oven to 425*F and quarter the potatoes. Toss the potatoes and garlic in a thin coating of avocado oil and lay them in an even layer on a baking sheet. Top with salt, garlic powder, and herbs de Provence and bake for 15 minutes. Stir and bake again for 10 minutes.
