Rutabega Hash
(Whole 30 Compliant)
This is the cousin to the sweet potato hash recipe I posted. You simply substitute rutabega for sweet potato. This is also great for a breakfast potato substitution or a snack. It pairs well with eggs or any meat.
I like to make it to eat with my husband when he makes bacon on Sunday!
Don’t forget to add a big green salad!
Ingredients:
1 Rutabega peeled and diced into small pieces
Coconut Oil or Ghee
2-3 cloves garlic, coarsely chopped
Salt to taste
Herbs de Provence (or oregano, basil, rosemary mix) to taste
Directions:
Heat the oil/ghee in a pan on medium/high heat. When it’s warm add the rutabega and the garlic to the pan together. Let sit for a minute to warm, then toss. Add the salt and spices to taste. Continue to play the sit and toss game until everything is browned up and cooked through. Don’t walk away. It takes about 10 minutes. Enjoy!
