Swordfish Skewers
(Whole 30 Compliant)
This recipe is similar to a chicken souvlaki. It’s a very simple marinade and could probably be used on chicken or other types of fish as well. I made a small portion, but the same amount of marinade would definitely work for more fish if you need to make more.
Ingredients:
4-5 wooden skewers (soaked in water)
1/2 lb. swordfish steak, cut into cubes.
Marinade:
3 Tablespoons olive oil
Juice from 2 lemons
1 tsp garlic powder
1 tsp oregano
1/2 tsp salt
1/4 tsp black pepper
Directions:
Place all the marinade ingredients in a ziploc bag with the swordfish.
Place the ziploc in the fridge and let chill for about 3 hours. (While it chilled, I also soaked the kebab skewers in water)
After 3 hours, heat a grill pan on medium high heat. Once it’s warm, place the skewers on the pan (no additional oil). *Be sure the grill pan is hot before you place the skewers on it to ensure nice grill marks
Grill the skewers for about 4 minutes. Flip and cook another 4 minutes.
Done!
I placed mine atop an arugula, kale, and beet salad dressed with lemon. Feel free to eat as you like!
