Avocado Tomato and Corn Salad
This is my go to, super quick, summer salad. I make it for summer gatherings and serve it with corn tortilla chips. It’s always a great hit with the family. Try it out and soon you’ll make it for every party too.
Ingredients:
1 ear of corn
1/2 pint of cherry tomatoes, cut into quarters
1/4 cup red onion, diced into 1/4 inch cubes
1 ripe avocado, cut into 1/4 inch cubes
1 large clove garlic, minced
Juice of 1 lime
salt to taste
Tortilla chips (optional to serve with the salad for dipping)
Directions:
Place the corn on it’s end and slice down the sides of it from top to bottom all the way around it to dislodge all the kernels. Add the kernels to a large bowl. Add all the other ingredients to the corn and toss together. Taste and add more salt if desired. EAT!
