Avocado Toast Party
If you ever find yourself hosting a last minute gathering, this is an easy idea and a crowd pleaser. This would also be great for a small bridal or baby shower. Serves 4
Ingredients:
2-4 avocados, peeled, pitted, and mashed
1-2 lemons
salt and pepper to taste
a loaf of bread sliced up and toasted (gluten free bread works great for this)
Toppings:
Extra virgin olive oil, for drizzling
5-10 garlic cloves peeled and put into small serving bowl
red pepper flakes also put into a small serving bowl
1/2 pint cherry tomatoes, sliced thinly and placed in small serving bowl
arugula salad (arugula dressed with lemon juice, olive oil, salt and garlic powder)
salt and pepper
Directions:
Take the mashed avocado and add lemon, salt and pepper to taste and place in a serving bowl.
Set out all the toppings on the table next to the avocado mash.
Toast the bread so it will be hot when you sit down to eat.
Ask your guests to “build their own” toast.
Start by rubbing the raw garlic over the warm bread.
Top with the avocado mash.
From there add any toppings you like. I added tomato slices to one of mine and red pepper flakes to the other. I topped both with a drizzle of olive oil and a pinch of salt ( I highly recommend this to finish whatever toppings you choose). You could also top the mash with the salad, or serve the salad on the side.
*Please keep in mind that once avocados are cut into, the vibrant green color doesn’t last long, so this dish is best served and eaten immediately. However, if you keep the mash in a sealed container right up to the moment you serve it, the color should keep pretty well. If there is a touch of browning, just stir the mixture through and it should all be vibrant green in no time.
