Mama’s Stovetop Apples

(or crustless apple pie)

This one my favorite fall/winter treats.  Every fall, when the leaves start to change, I inevitably get a hankering for this quick and easy dish.  My mom used to whip it up as a side dish when apples came into season.  We would put it on our plates right beside the protein and the veggies. A perfect sweet bite.

It basically tastes just like apple pie filling, but without the unecessary crust.  Unadulterated, pure apple goodness.  This is my “shaped up” version of my mom’s.  She used white sugar and I’m using maple sugar.  Trust me, this is an upgrade.  I didn’t think they could get any better, but that hint of maple sends this dish over the top.  In addition to serving this as a side dish, I would also serve this as dessert.  It will be delicious with (dairy free) vanilla ice cream on top. And don’t worry about having seconds. 😉

Ingredients:

4-5 Cortland Apples (or other good baking apple)

1/4 cup maple sugar

1 tablespoon cinnamon

2 tablespoons coconut oil

1/8 teaspoon salt (optional)

Directions:

Peel and core apples and cut into thin slices.  Place in a bowl and set aside.

In a small bowl combine sugar, cinnamon and salt.

Pour the sugar mixture over the apples and stir to coat the apples thoroughly in the sugar. (depending on how big your apples are, you may only need half of the sugar)

Heat the oil in a large saute pan.  When it’s warm add the apples to cook.

Stir occasionally to cook through.

Sometimes, I cover them with a lid to steam a little and cook faster.

When the apples are tender they are ready to serve.  It only takes a few minutes.

(If you have very watery apples, you can also add arrowroot powder to the pan to thicken the juices.  Add a teaspoon at a time and no more than 3 teaspoons).

These can be eaten hot or cold (if there are any left to chill 😉 ).

These are so quick to make that they become a simple way to make a weeknight dinner feel special.
