Buffalo Chicken Breasts

IMG_5280 Here’s a healthier way to serve buffalo chicken.  This recipe is a great way to spice up a weeknight meal.  They are baked instead of fried and gluten free.

Ingredients:

1lb chicken breasts (sliced into thin 2 inch pieces)

1-2 tablespoons avocado oil

Dry coating:

1/2 cup brown rice flour

1/4 cup arrowroot powder

1 1/2 teaspoons paprika

1/2 teaspoon garlic powder

1/8 teaspoon dried oregano

1/4 teaspoon freshly ground black pepper

1/8 teaspoon cayenne pepper

1/2 teaspoon salt

For sauce:

1 tablespoon ghee

1 tablespoon avocado oil

2 tablespoons “Raw Hot Sauce” (red pepper sauce with probiotics)

2 tabelspoons maple syrup

1/4 teaspoon umeboshi vinegar

1/4 teaspoon apple cider vinegar

Pinch cayenne

Pinch garlic powder

Directions:
Preheat oven to 425* F.

Mix together flour and all spices for dry coating.

Toss chicken in oil, then coat in flour mixture, shaking off excess.

Place chicken on baking sheet topped with aluminum foil. Bake for 9 minutes. Flip and bake another 9 minutes.

While they bake, melt the ghee in a small sauce pan and add all other sauce ingredients. Stir until combined and warmed through.

Place the sauce in a bowl and add the chicken to coat the pieces in sauce. 

Serve!
