Paleo Waffles

Makes about 3 large, Belgian style waffles

*As a reference, the picture below is half of a Belgian style waffle

Ingredients:

Dry Ingredients:

1 cup almond flour

1/4 cup cassava flour

1/4 cup arrowroot flour

1 teaspoon baking soda

1/4 teaspoon salt

Wet Ingredients:

3 eggs

1 tablespoon maple syrup

1/2 cup unsweetened almond milk

1 teaspoon vanilla extract

1 ripe banana, mashed

Coconut oil /ghee

Directions:

Preheat your waffle iron to medium heat.

Whisk together the almond flour, cassava flour, arrowroot flour, baking soda and salt.

In a separate bowl whisk together the eggs, maple syrup, milk and vanilla.  Stir in the mashed banana.

Add the wet ingredients into the dry ingredients and stir until combined.

Grease the waffle iron with coconut oil or ghee.

Pour just enough batter to coat the bottom of the iron. Close the iron, flip it and lock it.

Wait about 1 minute, or until you smell waffles. Then flip, open and remove the waffles with a spatula.

Enjoy!

I liked mine with blueberries sprinkled on top and a drizzle of maple syrup.
