Pear French Toast

By now you must know how I love french toast. And, how I much prefer it to pancakes (always have). Here’s another incarnation of my favorite breakfast treat. It’s both delicious and light. I love being able to eat breakfast/brunch and still feel energized and mobile after the meal. This is the perfect treat that you can eat on the regular.
Ingredients:
1 ripe pear, slice in half, cored, then sliced into 1/4″ slices
salt
1 egg, beaten
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
Coconut Oil
Directions:
Sprinkle the pears with salt and set aside.
Beat egg together with cinnamon, vanilla, and a pinch of salt.
Heat about a tablespoon of coconut oil in a pan.
Dip the pear slices into the egg batter, then brown on both sides in the pan.
Enjoy with traditional maple syrup, or top with ricotta/goat cheese, a drizzle of honey and some toasted nuts.
