“Snack Attack: Raspberry Chocolate Truffles”


When I first began cutting the sugar from my diet in order to clear up my skin and to get healthier, I had the HARDEST time trying to avoid traditional forms of chocolate and all its glory.

Here’s how I got around the sugar trap, but still enjoyed the fix I needed.  You get twice the antioxidants with this simple snack. 😉

All you need:

Fresh Raspberries (preferably organic)

Organic Cocoa Nibs

All you do:

Stuff 1-2 cocoa nibs into the hollow center of each raspberry.

Tada! Done!

You just made the healthiest (and easiest) “truffle” ever!

And I would typically eat a whole pint of berries this way.  I’m not ashamed to admit it.  It’s better than a whole pint of Ben and Jerry’s Phish Food.  (Although I admit, I’ve done this too…in the past…I know I’m not supposed to say that, but what’s true is true.)
