Raspberry Vinaigrette

This is a simple blender vinaigrette. Throw everything in the blender and done!
This is a great make ahead recipe as the raspberries hold it together so it won’t separate as it sits. This means you can make the whole batch on a weekend and let it carry you through the week one portion at a time. It should last for about 4 days. Keep yourself on the healthy track all week with this delicious and simple dressing.
Ingredients:
1/2 cup lime juice (about 8 limes)
2/3 cup olive oil
1 cup frozen raspberries
2 teaspoons raw apple cider vinegar
2 teaspoons maple syrup
1/4 teaspoon sea salt
1/8 teaspoon black pepper
Directions:
Add all the ingredients into a blender and blend until it’s smooth and fully combined. Toss with your choice of salad ingredients.
As you see pictured, I paired this dressing with romaine lettuce, carrots, toasted walnuts, dried cranberries, and caramelized shallots.
