“Snack Bite”

Hey Shapers,

When I come home from teaching fitness I always find myself looking for something that’s

salty and crunchy to eat,

like crackers or chips.

The latter used to be my “go-tos”… However, now that I’m trying to be more conscious of eating whole foods over processed foods, I am getting more creative in the kitchen.

Today, I want to share with you a great snack alternative I eat when I need to satisfy that unstoppable salty craving.  It’s quick to make and really hits the spot. I promise I don’t even miss the chips.

Ingredients:

1 Sweet Potato very THINLY sliced into “chips”. (pictured below)

1 avocado (cubed)

Lemon Juice (about ½ a lemon)

Salt

Garlic Powder

Directions:

Lay out the sweet potato slices on a plate. Top each slice with a small heap of avocado.  After all the slices are topped, take the lemon juice and drizzle over all the “crackers”.  Then sprinkle the top of all the crackers with salt and garlic powder to taste.

These could also make an excellent appetizer at a party.  You can make the sweet potato slices well in advance.  They keep well overnight in a Ziploc or Tupperware container in the fridge.  Then all you need to do is top them with the avocado et al… AND …Presto!  Easy, but impressive entertaining!
