Gluten Free Pumpkin Blondies

Make 24 squares


This is one of those recipes you throw together when you get a craving and then are so pleasantly surprised that it works!  I hope it soothes your chocolate cravings as well.


Wet ingredients:
1/2 cup pumpkin purée
1 cup maple sugar
2 eggs
2 teaspoons vanilla

Dry ingredients:
3/4 cup almond flour
3/4 cup sorghum flour
2 tablespoons arrowroot flour
2 tablespoons oat flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/8 teaspoon nutmeg
1/8 teaspoon cloves

Add ins:
1 cup semisweet chocolate chips
Preheat oven to 350*F and grease a 9 x 13 baking pan.
Mix together the wet ingredients. In a separate bowl sift and whisk together the dry ingredients. Mix the dry ingredients into the wet ingredients. Stir in the chocolate chips. Pour batter into prepared baking pan and bake for about 20-25 minutes. Let cool for 15 minutes before cutting.
