Vegan Nutella

 IMG_6385

This recipe is for one individual serving and can be whipped up in minutes, kind of like those microwave minute mug  cakes.  I throw everything into the food processor and have my sweet tooth fixed in no time.  This way I don’t eat everything else in the house in place of the one thing I really want…a CHOCOLATE dessert.

I’ve been tinkering with this for a long time trying to emulate the flavor and texture of “Nutella”, which I’m sure you know by now I used to eat by the jar full…gulp.  I really think I’ve mastered it now and can finally use this to make one of my favorite, crowd-pleasing desserts…”Nutella Pizza”.  Simply spread the nutella personal pudding recipe below onto your cooked crust of choice and top with berries or bananas.  We like strawberries in my house.

With that said, I mostly prefer to whip this up and eat it right away in a mug with a spoon and I promise it’s the same satisfaction you get from eating a jar of Nutella but without any regret.

Ingredients:

1 ripe avocado, pitted and roughly cut into chunks

1/4 teaspoon salt

3/4 teaspoon hazelnut liquor

3/4 teaspoon vanilla extract

1/4 cup maple syrup

1/4 cup cocoa powder

1/4 cup hazelnut milk (bought or homemade)

Directions:

Using a food processor, blend the avocado, salt, liquor, and vanilla extract until the avocado is smooth (you may have to stir it a few times in between processing to scrape down the sides).  Add the maple syrup and blend.  Add the cocoa powder and blend.  Then add the hazelnut milk and blend.  Once it’s smooth you are ready to eat!
