“Simple Sweet Potatoes”
Here is my actual recipe for the sweet potatoes I make for my weekly food prep, as mentioned in my “Food Prep” post.
Ingredients:
Sweet Potato
Directions:
Preheat oven to 425 degrees. Pierce each potato with a fork. Wrap each potato in aluminum foil. Toss in the oven for about 1 hour. When you go to take it out, it should feel a little squishy.
The inside is mushy enough to mash it and these will last for a week.

- Wrap each potato in aluminum foil.
- Toss in the oven for about 1 hour.
- When you go to take it out, it should feel a little squishy.
