“Simple Mashed Butternut Squash”

 As I mentioned in my “Food Prep” article.  I like to make a batch of mashed butternut squash in preparation for my week.

Here’s how I do it:

Ingredients:

Butternut Squash, peeled and diced

Coconut Oil

Salt

Garlic Powder

 

Preheat oven to 425 degrees.

Toss the butternut squash into a baking dish a dot the top with 3 -4 teaspoons of coconut oil.  Add salt and garlic powder taste.  Cover in foil and throw in the oven for about an hour.

When you retrieve it from the oven take a potato masher (or fork) and mash until it’s the consistency of mashed potatoes.

Done!
